Chapter 9: Rice

Perhaps the most common food in Asia, Rice is widely-used throughout the world as a staple in meals, an example would be traditional Chinese Fried Rice

    1. The best way to prolong the shelf-life of rice would be to store it in an air-tight container in a cool, dark and dry area. - Ryan Tai

    2. I agree with Ryan that generally, the best way to keep rice fresh for as long as possible is to store it in a cool dry place. However, for brown rice, due to its high oil content, the unused rice should be kept frozen at 0°C/F in order for its shelf-life to be at its maximum.     3. I agree with Jing Yi that brown rice is different from regular jasmine rice, and that it should be stored at 0°c, most likely in the freezer, in order to maximize it's shelf-life to the fullest.

  2. If I were to use freshly cooked white rice instead of rice that was cooked the night before, will it affect the texture/moisture of the fried rice/end product? - Anicea

    1. The answer to your question is yes, it will affect both the texture and flavour of the fried rice depending on the rice used. If you use rice from the day before, the starch flavour is not as strong as the rice is given time to reabsorb the starch. It will also result in a more grainy and smooth fried rice as the outer layer of the grains are drier than newly-cooked rice. Overall it is better and more advisable to use day-old rice to make fried rice.
