Chapter 12: Identifying Freshness of Dried Goods

For dried and preserved goods freshness of the product isn’t really priority but rather whether it can be used. In my opinion our senses are usually the most reliable instruments to tell if our dried fruit has gone bad. Some common traits of dried fruit going bad are discoloration, hardness and loss of flavor. If there is a rotten smell, then your dried fruit has gone bad for sure. There is a far less chance of mold formation with dried fruit than fresh fruit because the moisture has been removed, but always beware of mould and toss your dried fruit if even the slightest mould is visible.

    1. Keeping dried goods in the fridge does extend its shelf life, but it's not really needed as the moisture content of the goods are already low, thus it minimizes bacterial growth. However, storing dried goods in a cool dark area in an air-tight container is the best for extending the shelf life.

You didn't state how to determine the 'freshness' of rice which could be done by checking whether are there any tiny bugs crawling around the rice grains as well as feeling if there are any oily substances on the surface of brown rice (http://www.eatbydate.com/grains/rice-shelf-life-expiration-date/)

  3. Your summary about identifying freshness of the dried goods could be further summarised, maybe summarised them into point forms/steps so it's simpler for readers. And different chapters could actually be combined into one post by combining some pictures into a collage picture so it wouldn't look too messy.
